Beneficial Blueberry Bread - Vegan and Gluten Free

 

This bread provides protein, calcium, potassium, healthy fats, fiber and omega 3's. Great as an afternoon snack or breakfast
 
1 cup almond flour (can be found in most grocery stores)
1/2 cup unsweetened coconut flakes
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla
1 tsp ground flaxseed
1/4 cup coconut palm sugar (can be found at organic grocery store)
1 ripe banana
2 eggs
1/2 cup unsweetened almond milk
1 cup fresh local or organic blueberries
 
Preheat oven to 350 degrees. 
 
Add all ingredients to a medium mixing bowl except the blueberries. With a large spoon mix all the ingredients together mashing the banana with the spoon. When mixed all the way through gently fold in the blueberries. Use a 12x9 non stick pan. Pour batter into pan and bake for 35-40 minutes. Let cool for 10 minutes before serving.
